Measure syrup
Pour 2 tablespoons of your chosen flavored syrup into the bottom of a 12–16 oz serving glass. If you prefer a sweeter drink, add up to 1 tablespoon of simple syrup and stir briefly to combine.
Carbonation & Ice
Add ice
Fill the glass about three-quarters full with cubed ice (approximately 1 cup). The ice chills the soda and slows dilution.
Top with carbonated water
Slowly pour 8 fl oz (about 1 cup) of chilled carbonated water or seltzer over the ice and syrup. Pour gently down the side of the glass or over a spoon to preserve carbonation and reduce foaming.
Stir gently
Use a long spoon or cocktail stirrer to gently lift and stir the mixture 2–3 times to distribute the syrup without flattening the bubbles. Aim for an even color and flavor but keep most effervescence intact.

Add cream (if using)
If you want a creamy Italian soda, pour 2 tablespoons of half-and-half or heavy cream over the top. For a float-style version, add 1–2 scoops of vanilla ice cream instead. After adding cream or ice cream, give one very gentle stir to swirl it in — avoid over-stirring to preserve fizziness and visual layering.
Garnish
Finish and serve
Top with an optional dollop (about 2 tbsp) of whipped cream, then garnish with a maraschino cherry, a slice of fresh fruit that matches your flavor, and/or a mint sprig. Serve immediately with a straw and long spoon.
