Prepare the Ingredients
Start by placing the pork or chicken cutlets between two pieces of plastic wrap and pound them to an even thickness using a meat mallet.
Set Up Breading Station
In three separate shallow dishes, place the flour in the first, beaten eggs in the second, and mix breadcrumbs, grated Parmesan, oregano, thyme, salt, and pepper in the third.
Bread the Cutlets
Dredge each cutlet first in flour, shaking off the excess, then dip in the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
Fry the Schnitzels
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded cutlets and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
Drain and Serve
Remove the schnitzels from the skillet and drain on paper towels. Serve immediately with your choice of sides.
