Preparation
Make the Dough
In a large bowl, combine the flour and salt. Create a well in the center and crack the eggs into it. Gradually mix the flour into the eggs, kneading until a smooth dough forms. Wrap in plastic wrap and let rest for 30 minutes.
Prepare the Filling
In a bowl, combine ricotta, Parmesan, mozzarella, chopped basil, and black pepper. Mix until well combined and set aside.
Roll Out the Dough
Divide the rested dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, about 1/16 inch thick.
Form the Ravioli
Place a teaspoon of filling about 1 inch apart on one sheet of dough. Brush the edges with water, then place another sheet of dough over the top. Press to seal and cut into squares.
Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for about 3-4 minutes or until they float. Drain and toss gently with the pesto sauce.
