Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals until smooth. Let cool slightly.

Whip the Cream

In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form. Set aside.

Prepare the Egg Mixture

In another bowl, whisk the egg yolks with the granulated sugar until pale and creamy. Stir in the melted chocolate until well combined.

Combine the Mixtures

Gently fold the whipped cream into the chocolate-egg mixture until fully incorporated. Be careful not to deflate the mixture.

Whip the Egg Whites

In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions.

Chill the Mousse

Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

Serve

Serve chilled, optionally garnished with whipped cream or chocolate shavings.
