Prepare the Spinach

Wash the spinach thoroughly and chop it finely. Blanch in boiling water for 2-3 minutes, then drain and set aside.

Cook the Onions

In a pan, heat the oil or ghee over medium heat. Add the cumin seeds and allow them to splutter. Add the finely chopped onion and sauté until golden brown.

Add Tomatoes and Spices

Add the chopped tomato and cook until soft. Then, add the ginger-garlic paste, turmeric powder, coriander powder, red chili powder, and salt. Cook until the oil separates from the mixture.

Combine Spinach and Paneer

Add the blanched spinach to the pan and mix well. Cook for about 5 minutes. Cube the paneer and gently fold it into the mixture. Add dried fenugreek leaves and mix well.

Final Cooking

Cook for another 5-7 minutes, allowing the flavors to meld. Adjust salt and spices as needed. Serve hot with naan or rice.
