Searing the Lamb

Heat ghee in a large pot over medium-high heat. Add the lamb shanks and sear them on all sides until browned. Remove and set aside.

Caramelizing the Onions

In the same pot, add sliced onions and cook until they are deeply caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

Adding Aromatics

Add minced garlic and ginger to the pot with the onions. Cook for an additional 2-3 minutes until fragrant.

Building the Broth

Stir in the chopped tomatoes and cook until they soften. Return the seared lamb shanks to the pot. Pour in the water and bring to a boil.

Simmering

Reduce heat to low, cover the pot, and let it simmer for about 2-3 hours, or until the lamb is tender and the broth is rich and flavorful.

Final Seasoning

Taste and adjust seasoning with salt as needed. Serve hot, garnished with fresh cilantro if desired.
