    Prepare the Steak

    Season the filet medallions with salt and black pepper on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the filet medallions and sear for about 3-4 minutes on each side for medium-rare. Remove from skillet and set aside.

    Make the Sauce

    In the same skillet, add the sliced wild mushrooms and shallots. Sauté for 3-4 minutes until softened.

    Add Cognac

    Carefully add the cognac to the skillet and ignite it to burn off the alcohol (optional). Let it cook for about 1 minute.

    Finish the Sauce

    Stir in the heavy cream and simmer for 3-5 minutes until the sauce thickens slightly.

    Combine and Serve

    Return the filet medallions to the skillet, spooning the sauce over them. Cook for an additional minute to heat through. Garnish with chopped parsley before serving.
