Preparing the Pork Chop

Seasoning the Pork Chop

Season the dry aged pork chop generously with salt, black pepper, and fresh thyme on both sides.

Cooking the Pork Chop

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chop and sear for about 4-5 minutes on each side or until it reaches your desired doneness. Let it rest for 5 minutes before serving.

Making Yukon Gold Mashed Potatoes

Boiling the Potatoes

Peel and chop the Yukon gold potatoes into cubes. Boil them in salted water until tender, about 15-20 minutes.

Mashing the Potatoes

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Preparing the Bacon Demi

Cooking the Bacon

In a saucepan, cook the bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pan.

Making the Demi

Add chopped shallot to the pan and sauté until translucent. Pour in red wine and reduce by half. Add chicken stock and simmer until thickened. Stir in the crumbled bacon and finish with butter.
