    Make the Croutons

    Preheat your oven to 375°F (190°C). Cut the crusty bread into cubes and toss with olive oil, salt, and pepper. Spread the bread cubes on a baking sheet and bake for about 10-15 minutes until golden and crisp. Set aside.

    Prepare the Grilled Romaine

    Cut the romaine heads in half lengthwise. Brush the cut sides with olive oil and sprinkle with salt and pepper. Preheat your grill to medium-high heat. Grill the romaine, cut side down, for about 2-3 minutes until charred. Flip and grill for an additional 2 minutes.

    Make the Caesar Vinaigrette

    In a small bowl, whisk together olive oil, grated pecorino cheese, salt, and pepper to taste. Adjust seasoning as needed.

    Assemble the Salad

    On a serving platter, place the grilled romaine halves. Drizzle with the Caesar vinaigrette and top with house-made croutons and additional grated pecorino cheese.
