Preparation

1

Marinate the Chicken

In a large bowl, combine the olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper. Add the chicken breasts and toss to coat well. Cover and marinate in the refrigerator for at least 30 minutes.

2

Prepare the Asparagus and Tomatoes

While the chicken is marinating, preheat your oven to 400°F (200°C). On a baking sheet, place the trimmed asparagus and halved cherry tomatoes. Drizzle with balsamic vinegar and a pinch of salt and pepper.

Cooking

3

Bake the Vegetables

Place the baking sheet with asparagus and tomatoes in the preheated oven. Roast for about 20 minutes, or until the asparagus is tender and slightly charred.

4

Cook the Chicken

While the vegetables are roasting, heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Serving

5

Plate the Dish

Once both the chicken and vegetables are cooked, serve the chicken breasts alongside the roasted asparagus and tomatoes. Drizzle any remaining balsamic vinegar over the top for added flavor. Enjoy your meal!
