Method
Prep
Thinly slice one jalapeño and reserve one attractive wheel for garnish. Core and slice an apple, then cut one thin apple slice for garnish. Chill the serving glass in the freezer while you mix.
Mixing
Muddle
In a cocktail shaker, place the 3 thin jalapeño slices. Gently muddle 6–8 times to release heat and aroma but avoid pulverizing the seeds (to control spice).
Combine
Add 2 oz reposado tequila, 1 oz fresh apple juice, 0.75 oz fresh lemon juice, 0.5 oz ginger syrup, and 0.5 egg white (if using) into the shaker.
Dry Shake
Seal the shaker and dry-shake (no ice) vigorously for 15–20 seconds to emulsify the egg white and build a frothy texture.
Wet Shake
Add a generous handful of ice to the shaker and shake hard for another 10–15 seconds to chill and dilute to proper balance.
Strain
Double-strain the cocktail into the chilled, sugar-rimmed coupe or rocks glass (use a fine mesh strainer to remove jalapeño bits). If you prefer served on the rocks, fill the serving glass with fresh ice and single-strain over the ice.
Add 2 dashes of Angostura bitters on top of the foam and use a toothpick to create a simple design if desired.
