Poaching Peaches

Prepare the Peaches

Bring a large pot of water to a boil. Score the bottom of each peach with a small 'X'.

Poach the Peaches

Gently place the peaches in boiling water for about 1-2 minutes. Remove and transfer to an ice bath to cool. Once cool, peel the skins off.

Make Poaching Syrup

In the same pot, combine 4 cups of water, 1 cup of sugar, and the vanilla bean (split). Bring to a simmer.

Poach in Syrup

Add the peeled peaches to the syrup and poach for about 10 minutes. Remove from heat and let them sit in the syrup until ready to serve.

Raspberry Sauce

Prepare the Sauce

In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until raspberries break down and the sauce thickens, about 5-7 minutes. Strain if desired.

Praline

Make the Praline

In a saucepan over medium heat, melt the sugar until it turns golden brown. Stir in sliced almonds and pour onto a parchment-lined baking sheet to cool. Once hardened, break into pieces.

Assembly

Assemble the Dessert

Slice the poached peaches and place them on a serving plate. Add a scoop of vanilla ice cream, drizzle with raspberry sauce, and sprinkle with praline pieces.
