Pastry Preparation

1. Make the Pastry Dough

In a large bowl, mix flour and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in cold water until dough forms. Wrap in plastic and refrigerate for 30 minutes.

2. Roll out the Pastry

On a floured surface, roll out the dough to fit a loaf pan. Reserve some for the top crust.

3. Prepare the Filling

In a mixing bowl, combine ground pork, ground beef, onion, garlic, egg, heavy cream, and spices. Mix well until fully incorporated.

Assemble and Bake

4. Assemble the Pâté

Preheat oven to 350°F (175°C). Press the rolled out pastry into the loaf pan, leaving excess hanging over the edges. Fill with the meat mixture. Fold the excess pastry over the top and seal.

5. Bake the Pâté

Brush the top with egg wash. Bake for 1 hour or until the internal temperature reaches 160°F (70°C). Let cool before removing from the pan.
