Preparation of Pork Rinds

Prepare the Pork Skin

Clean the pork skin thoroughly, removing any hair and excess fat. Cut into small strips or bite-sized pieces.

Boil the Pork Skin

In a large pot, add the pork skin and cover it with water. Add salt and bring to a boil. Reduce heat and simmer for about 30 minutes until tender.

Dry the Pork Skin

Remove the pork skin from the pot and place it on a baking sheet. Pat it dry with paper towels and let it cool completely. You can also refrigerate it overnight to ensure it's dry.

Frying and Seasoning

Heat the Oil

In a deep frying pan, heat vegetable oil to 180°C (350°F).

Fry the Pork Rinds

Once the oil is hot, carefully add the dried pork skin pieces in batches. Fry until they puff up and turn golden brown, about 2-3 minutes.

Drain and Season

Use a slotted spoon to remove the pork rinds from the oil and drain them on paper towels. While they are still hot, drizzle with maple syrup and sprinkle the spice mix (smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper) over the top. Toss to coat evenly.
