    Make the Choux Pastry

    In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in the flour all at once until the mixture forms a ball.

    Incorporate Eggs

    Let the mixture cool for a minute, then add eggs one at a time, mixing well after each addition until smooth and glossy. Stir in the grated mimolette cheese, black pepper, and vermouth.

    Pipe the Dough

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Using a piping bag, pipe small mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.

    Bake

    Bake in the preheated oven for 20-25 minutes until the gougères are puffed and golden brown. Do not open the oven door while baking.

    Remove from the oven and let them cool slightly before serving. Enjoy warm!
