Foie Gras Terrine

    Prepare the Foie Gras

    Clean the foie gras by removing any veins and impurities. Cut it into large pieces and place it in a bowl.

    Blend Ingredients

    Add heavy cream, cognac, salt, black pepper, and nutmeg to the bowl with foie gras. Blend until smooth and well combined.

    Soften Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until softened. Remove and squeeze out excess water.

    Incorporate Gelatin

    Gently heat a small amount of the foie gras mixture and dissolve the softened gelatin in it. Mix this back into the main foie gras mixture.

    Mold the Terrine

    Line a terrine mold with plastic wrap, leaving enough overhang to fold over the top. Pour in the foie gras mixture and smooth the top.

    Chill

    Cover with plastic wrap and refrigerate for at least 24 hours to set.
