Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate and melt it gently in a heatproof bowl over simmering water (double boiler method) or in the microwave, stirring until smooth. Let it cool slightly.

    Whisk the Eggs

    Separate the egg yolks and whites. In a bowl, whisk the egg yolks with the sugar until pale and creamy. Mix in the melted chocolate and vanilla extract.

    Beat the Egg Whites

    In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture, being careful not to deflate the mixture.

    Whip the Cream

    In another bowl, whip the heavy cream until it holds soft peaks. Fold the whipped cream into the chocolate mixture until fully combined.

    Chill the Mousse

    Spoon the mousse into serving dishes or glasses. Refrigerate for at least 2 hours or until set.

    Serve

    Once set, top the mousse with fresh blueberries, a dollop of chantilly cream, and shaved chocolate before serving.
