Main Ingredients

Method

Preparation

  1. 1

    Prepare the Game Meat

Trim any excess fat from the game meat and cut it into 1-inch cubes. Season with salt and black pepper.

  2. 2

    Chop the Vegetables

Chop the onion, dice the carrots and celery, and slice the mushrooms. Mince the garlic.

Cooking

  1. 3

    Sear the Meat

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed game meat and sear until browned on all sides, about 5-7 minutes. Remove the meat and set aside.

  2. 4

    Sauté the Aromatics

In the same pot, add the chopped onions, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

  3. 5

    Add Mushrooms and Wine

Add the sliced mushrooms to the pot and cook for another 2-3 minutes. Pour in the red wine, scraping the bottom of the pot to release any browned bits.

  4. 6

    Combine Ingredients

Return the seared game meat to the pot. Add the beef broth, dried thyme, and bay leaves. Stir to combine.

  5. 7

    Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the meat is tender.

Finishing Touches

  1. 8

    Serve the Dish

Remove the bay leaves. Taste and adjust seasoning with salt and pepper if necessary. Ladle the stew into bowls and garnish with chopped fresh parsley.
