Prepare vegetables
Wash and dry the mixed greens and place in a large bowl or platter. Core and cut the tomatoes into wedges (about 1-inch). Peel or scrub the cucumber and cut into 1/4-inch half-moons. Peel the red onion, cut in half lengthwise, then slice very thinly into half-rings. Add the tomatoes, cucumber, and sliced onion to the greens.

Add olives and feta
Pit the Kalamata olives if not already pitted and scatter them over the salad. Crumble the feta cheese into bite-sized chunks and add on top. If using parsley, roughly chop and sprinkle over the salad.

Marinate chicken
In a small bowl, whisk 2 tbsp olive oil, 2 tbsp lemon juice, minced garlic, 1 tsp dried oregano, 1 tsp kosher salt and 1 tsp black pepper. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Massage to coat, then let sit at room temperature for 15 minutes or refrigerate for 30 minutes to 2 hours for more flavor.

Cook chicken
Heat a large skillet or grill pan over medium-high heat and add a thin film of oil or spray. Remove chicken from marinade, letting excess drip off. Cook chicken 5-7 minutes per side (depending on thickness) until an instant-read thermometer inserted into the thickest part reads 165°F (74°C) and the exterior is golden-brown. Transfer to a cutting board and let rest 5 minutes, then slice thinly against the grain into strips or bite-sized pieces.

In a small jar or bowl combine 3 tbsp olive oil, 2 tbsp red wine vinegar, 1 tsp Dijon mustard, 1 tsp dried oregano, 1 tsp honey (if using), 1 tsp salt and 1 tsp freshly ground black pepper. Whisk or shake vigorously until emulsified. Taste and adjust seasoning: add more salt, pepper, or a squeeze of lemon if desired.

Assemble salad
Drizzle about two-thirds of the dressing over the salad and gently toss to combine so vegetables are lightly coated. Arrange the sliced chicken over the top. Drizzle remaining dressing over the chicken, or serve extra on the side.
