    Prep

    Wash and scrub the russet potatoes. Leave the skin on (optional) and cut into 1/4- to 1/3-inch thick matchstick fries. Place cut fries in a large bowl of cold water and soak 20–30 minutes to remove excess starch; this helps them crisp.

    After soaking, drain the fries and rinse under cold water. Pat completely dry with clean kitchen towels or paper towels. If using cornstarch, toss the dried fries with 1 tsp cornstarch to coat lightly.

    Heat oil in a deep skillet or Dutch oven to 325°F (if you have a thermometer) for the first blanch fry. Working in a single layer (do not overcrowd), fry the potatoes for 3–4 minutes until soft but not browned. Use a slotted spoon to transfer fries to a paper towel–lined tray and let cool for 5 minutes.

    Increase oil temperature to 375°F. Return fries to the hot oil in batches and fry 2–3 minutes until golden and crisp. Drain on fresh paper towels and immediately season with 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp paprika; toss gently to coat.

    While fries are resting from the first fry, heat 1 tsp vegetable oil in a medium skillet over medium-high heat.

    Add the finely diced onion and sauté 2–3 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.

    Add ground beef to the skillet and break into small crumbles with a spatula. Cook 5–7 minutes until browned and cooked through. Stir in 1 tsp Worcestershire sauce, 1/2 tsp salt, and 1/4 tsp black pepper. Taste and adjust seasoning. Remove from heat and drain any excess fat if needed.

Assemble & finish

    Preheat oven broiler to high or set oven to 425°F if you prefer melting under heat rather than broiler.

    Arrange the hot fries in a single even layer on an oven-safe baking sheet or cast-iron skillet. Scatter the cooked ground beef mixture evenly over the fries.

    Sprinkle 1 cup shredded cheddar evenly over the fries and beef. If using American cheese, tear slices and drape over the top for extra melt and creaminess.

    Place under the broiler 1–2 inches from the heat for 1–2 minutes, watching closely, until cheese is bubbling and slightly browned. If using the 425°F oven, bake 4–6 minutes until cheese is melted.

    Remove from oven. Drizzle ketchup (2 tbsp) and dot mustard (1 tsp) over the fries or serve on the side for dipping. Scatter sliced pickles and green onions or chives on top.
