Burger Patties

    Prepare Mixture

    In a large bowl combine ground chicken, breadcrumbs, egg, minced shallot, minced garlic, Worcestershire sauce, Dijon mustard, chopped parsley, kosher salt, black pepper and smoked paprika (if using). Mix gently with your hands or a spoon until just combined — avoid overworking to keep patties tender.

    Portion & Shape

    Divide the mixture into 4 equal portions (about 4 oz / 113 g each). With lightly oiled hands, form each portion into a patty about 3.5–4 inches in diameter and roughly 3/4 inch thick. Make a slight dimple in the center of each patty with your thumb to prevent doming while cooking.

    Cook Patties

    Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tablespoon olive oil and swirl to coat. When oil shimmers, add two patties without crowding. Cook undisturbed 4–5 minutes until a golden crust forms and edges are opaque. Flip and add a splash (about 1 tsp) of oil if pan is dry. Cook another 4–5 minutes until the internal temperature reaches 165°F (74°C). If using cheese, place a slice on each patty in the last minute of cooking and cover the pan to melt. Transfer cooked patties to a plate and tent loosely with foil; repeat with remaining oil and patties.

Sauce

    While patties cook, whisk together mayonnaise, ketchup, Dijon mustard, lemon juice, hot sauce (if using), salt and pepper in a small bowl. Taste and adjust seasoning. Refrigerate until ready to assemble.

    Prepare Buns and Veggies

    Slice buns in half. Thinly slice tomato and red onion if not already done. Rinse and dry lettuce leaves. If you prefer warmed buns, spread softened butter (or brush olive oil) on cut sides.

    Toast Buns

    Heat a clean skillet over medium heat. Place buttered cut-side-down buns in the skillet and toast 1–2 minutes until golden and crisp. Alternatively, toast under a broiler for 1–2 minutes—watch closely to avoid burning.

    Assemble Burgers

    Spread a generous tablespoon of sauce on the bottom bun. Place a lettuce leaf on the sauce, then a hot chicken patty (cheese side up if used). Top with tomato slice, a few rings of red onion and pickles if desired. Spread sauce on the top bun and place it on the burger. Repeat for remaining burgers.

    Serve burgers immediately with desired sides (fries, salad, or coleslaw). Leftover cooked patties can be refrigerated in an airtight container for up to 3 days.
