    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into even-sized sticks, about 1/4-inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

    Heat the Tallow

    In a large pot or deep fryer, heat the tallow over medium-high heat until it reaches 350°F (175°C).

    Prepare the Aromatics

    Finely chop the fresh rosemary and mince the garlic cloves.

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a clean towel. Carefully add the potatoes in batches to the hot tallow. Fry until golden brown and crispy, about 5-7 minutes per batch.

    Season the Fries

    Once the fries are cooked, remove them from the tallow and place them on a paper towel-lined plate. While they are still hot, sprinkle with salt, chopped rosemary, and minced garlic.

    In a medium bowl, combine the mayonnaise, mitmita spice blend, lemon juice, and minced garlic clove. Mix until well combined.

    Add salt to the aioli to taste, mixing thoroughly until the seasoning is evenly distributed.
