Method

Prepare Sweet Potatoes

    Boil Sweet Potatoes

    Peel and chop the sweet potatoes into small cubes. Boil them in salted water for about 15-20 minutes until fork-tender. Drain and let cool.

    Mash Sweet Potatoes

    Once cooled, mash the sweet potatoes in a bowl until smooth.

Make the Fritter Batter

    Combine Ingredients

    In the bowl with the mashed sweet potatoes, add flour, eggs, cayenne pepper, salt, and black pepper. Mix until well combined.

    Heat olive oil in a skillet over medium heat. Scoop tablespoons of the mixture and form into small patties.

Cook the Fritters
