    Prepare the Vegetables

    Slice the onion and bell pepper into thin strips. Chop the wild mushrooms.

    Cook the Steak

    Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Season the ribeye steak with salt and black pepper, then sear it in the skillet for about 4-5 minutes on each side or until desired doneness. Remove from skillet and let rest.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the sliced onions, bell peppers, and mushrooms. Sauté until they are soft and caramelized, about 5-7 minutes.

    Slice the Steak

    Once the steak has rested, slice it thinly against the grain.

    Assemble the Sandwich

    On each toasted hoagie roll, spread a generous amount of garlic aioli. Layer the sliced steak, followed by the sautéed vegetables, provolone cheese, and giardiniera.

    Place the assembled sandwiches under a broiler for 1-2 minutes or until the cheese melts and is bubbly.
