    Prepare the Ingredients

    Chop the tomato and set aside. Cook the bacon until crispy, then crumble it into small pieces.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

    Cook the Bacon

    In a non-stick skillet, heat the olive oil over medium heat. Add the crumbled bacon and cook for about 2-3 minutes.

    Add Tomatoes

    Add the chopped tomato to the skillet and cook for another 1-2 minutes until softened.

    Pour in the Eggs

    Pour the whisked eggs over the bacon and tomato mixture, tilting the skillet to spread the eggs evenly.

    Add Cheese

    Sprinkle the Chihuahua cheese over the top of the omelet. Cook for about 3-4 minutes, or until the eggs are set.
