    Prepare the Mushrooms

    In a skillet over medium heat, add olive oil. Once hot, add the exotic mushrooms and sauté for about 5-7 minutes until they are tender and lightly browned. Season with a pinch of salt and pepper. Remove from skillet and set aside.

    Cook the Spinach

    In the same skillet, add the fresh spinach and cook until wilted, about 2-3 minutes. Remove and set aside with the mushrooms.

    Make the Omelet

    In a bowl, whisk together the egg whites, salt, and black pepper until frothy. Pour the egg mixture into the skillet, swirling to coat the bottom evenly. Cook on medium-low heat until the edges begin to set, about 3-4 minutes.

    Add Filling

    Once the eggs are mostly set, add the sautéed mushrooms and spinach evenly over one half of the omelet. Using a spatula, carefully fold the other half over the filling and let cook for another 2 minutes until fully set.

    Serve

    Slide the omelet onto a plate and serve immediately. Enjoy with tavern potatoes and toast on the side.
