    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season and Bake

    Drain and thoroughly dry the soaked potatoes. Toss them in a large bowl with olive oil, rosemary, thyme, salt, and pepper. Spread them in a single layer on a baking sheet and bake for 30-35 minutes, or until crispy and golden brown. Flip halfway through for even cooking.

Truffle Aioli

    Mix the Aioli

    In a bowl, combine mayonnaise, truffle oil, minced garlic, lemon juice, and salt. Mix until smooth and well combined.

    Taste and Adjust

    Taste the aioli and adjust the salt or add more lemon juice if desired.
