    Boil the Eggs

    Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium heat. Once boiling, cover the pan, remove from heat, and let sit for 12 minutes.

    Prepare the Aioli

    In a mixing bowl, combine mayonnaise, Dijon mustard, smoked paprika, salt, and black pepper. Mix well until smooth.

    Cool and Peel the Eggs

    Transfer the eggs to an ice bath for 5 minutes. Once cooled, gently tap and peel the eggs under running water.

    Make the Filling

    Slice the peeled eggs in half lengthwise. Remove the yolks and place them in a bowl. Mash the yolks with the aioli mixture until creamy and smooth.

    Assemble the Deviled Eggs

    Spoon or pipe the yolk mixture back into the egg whites. Top each egg half with a spoonful of house-made giardiniera and crispy pork belly.

    Garnish

    Sprinkle additional smoked paprika on top for garnish.
