    Prepare the Ingredients

    Chop the smoked ham, red bell pepper, and onion into small pieces.

    Sauté the Vegetables

    In a non-stick skillet over medium heat, add a little oil and sauté the chopped onions and red bell pepper until softened, about 3-4 minutes. Add the chopped smoked ham and cook for another 2 minutes.

    Whisk the Eggs

    In a bowl, whisk together the eggs until well combined. Season with salt and pepper to taste.

    Cook the Omelet

    Pour the egg mixture into the skillet with the sautéed ingredients. Cook until the edges begin to set, then gently lift the edges with a spatula and tilt the skillet to allow uncooked egg to flow to the edges.

    Add Cheese and Finish

    Once the omelet is mostly set, sprinkle the smoked cheddar cheese on top. Fold the omelet in half and cook for another minute until the cheese melts and the omelet is cooked through.

    Serve

    Slide the omelet onto a plate and serve warm with tavern potatoes and toast.
