Prepare the Waffles
In a large bowl, whisk together the flour, baking powder, salt, and sugar. In another bowl, mix the buttermilk, eggs, and melted butter. Combine the wet and dry ingredients until just mixed. Preheat your waffle iron and cook the batter according to the manufacturer's instructions until golden brown.

Fry the Chicken
Season the chicken thighs with salt and pepper. Dredge each piece in flour, shaking off the excess. Heat oil in a deep skillet over medium-high heat. Fry the chicken for about 6-8 minutes on each side or until golden and cooked through. Remove and drain on paper towels.

Make the Coleslaw
In a bowl, combine the shredded cabbage, carrots, jalapeño, mayonnaise, and salt to taste. Mix until well combined.

On a plate, stack a waffle, top with a piece of fried chicken, add a generous serving of crispy coleslaw, and drizzle with spicy honey. Serve immediately.
