Beef Tenderloin Medallions

Preparation

    Marinate the Onions

    Slice the red onions and place them in a bowl. Add balsamic vinegar and toss to coat. Let them marinate for at least 30 minutes.

    Prepare the Beef

    Preheat the oven to 400°F (200°C). Season the beef tenderloin with salt and black pepper. Heat olive oil in a skillet over medium-high heat, and sear the beef for 3-4 minutes on each side until browned.

    Prepare the Blue Cheese Crust

    In a bowl, combine blue cheese and bread crumbs. Once the beef is seared, remove it from the skillet and place it on a baking sheet. Spread the blue cheese mixture over the top of the beef.

    Bake the Beef

    Transfer the baking sheet to the oven and bake for 10-15 minutes or until the desired doneness is reached (130°F for medium-rare).

    Prepare the Double Baked Potatoes

    While the beef is baking, bake the potatoes in the oven for about 45-60 minutes until tender. Let cool slightly, then cut in half and scoop out the inside. Mix the potato flesh with butter, sour cream, and chopped chives. Refill the potato skins with this mixture and bake again for 20 minutes.

    Serve the beef tenderloin medallions with marinated red onions and double baked potatoes on the side.
