    Prepare the Dough

    In a large mixing bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Add in the flour, salt, and olive oil. Mix until a rough dough forms.

    Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

    Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Focaccia

    Once the dough has risen, punch it down and transfer it to a greased baking sheet. Press it out into a rectangle about 1-inch thick.

    Dimple the surface of the dough with your fingers and sprinkle fresh herbs on top. Drizzle with olive oil.

    Bake

    Preheat the oven to 425°F (220°C). Bake the focaccia for 20-25 minutes or until golden brown.

    Once baked, remove from the oven and let it cool slightly. Drizzle with truffle oil and serve with ricotta and honey on the side.
