Tuna Crudo Preparation

    Prep the Tuna

    Using a sharp knife, thinly slice the sushi grade tuna into 1/4 inch thick slices. Set aside in the refrigerator until ready to serve.

    Prepare the Wonton Crisps

    Preheat the oven to 375°F (190°C). Cut wonton wrappers into triangles or desired shape. Place on a baking sheet and bake for 5-7 minutes or until golden brown and crispy. Remove from oven and let cool.

    Prepare the Lemon Emulsion

    In a small bowl, mix the lemon juice with a pinch of salt and whisk until slightly thickened. Set aside.

    Assemble the Dish

    On each wonton crisp, place a slice of tuna, drizzle with cocktail sauce, and sprinkle with sesame seeds. Drizzle with lemon emulsion before serving.

Pickled Pear Relish Preparation

    Prepare the Pickling Liquid

    In a saucepan, combine white vinegar, sugar, salt, and black peppercorns. Bring to a boil over medium heat, stirring until sugar and salt are dissolved. Remove from heat and let cool slightly.

    Pickle the Pears

    Peel and dice the pears into small cubes. Place them in a clean jar and pour the cooled pickling liquid over the pears. Seal the jar and refrigerate for at least 2 hours or overnight for best flavor.
