Burger Patties

Prepare the Patties
In a bowl, take the ground beef and divide it into two equal portions. Form each portion into a loose ball and then flatten them into thin patties, about 1/2 inch thick. Season both sides with salt and black pepper.

Cook the Patties
Heat a skillet or griddle over medium-high heat. Place the patties on the hot surface. Smash each patty down with a spatula to create a crust. Cook for about 2-3 minutes until browned, then flip and add a slice of cheese on top. Cook for another 1-2 minutes until the cheese is melted.

Prepare the Toppings
While the onions are caramelizing, prepare the shredded lettuce and house pickles to have them ready for assembly.

Mix the Stash Sauce
In a small bowl, combine mayonnaise, ketchup, Dijon mustard, garlic powder, and smoked paprika. Stir well to combine and set aside.

Cook the Fries
Prepare the frozen French fries according to the package instructions, usually by baking or frying. Once cooked, sprinkle with salt.
Assembly

Assemble the Smash Burger
On a toasted bun (optional), layer the cooked patties with melted cheese, caramelized onions, shredded lettuce, house pickles, and a generous drizzle of the stash sauce. Top with the other half of the bun.

Serve the smash burger with a side of hot fries and enjoy with a cold High Life if desired.
