Method

Preparation

  1. 1

    Prepare the Steak

Take the ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

  2. 2

    Season the Steak

Generously season both sides of the ribeye steak with salt and black pepper, pressing it into the meat to adhere.

Cooking

  1. 3

    Heat the Pan

In a heavy skillet or cast-iron pan, add olive oil and heat over medium-high heat until the oil is shimmering but not smoking.

  2. 4

    Sear the Steak

Place the ribeye steak in the hot pan and sear for about 4-5 minutes without moving it, allowing a crust to form.

  3. 5

    Flip the Steak

Using tongs, flip the steak to the other side and add butter, garlic cloves (crushed), and the sprig of rosemary or thyme to the pan.

  4. 6

    Baste and Cook

Tilt the pan slightly and use a spoon to baste the steak with the melted butter and aromatics. Cook for another 4-5 minutes for medium-rare, adjusting time to your desired doneness.

  5. 7

    Rest the Steak

Remove the steak from the pan and place it on a cutting board. Tent it loosely with foil and let it rest for at least 5 minutes before slicing.
