Halibut Preparation

    Season the Halibut

    Pat the halibut fillets dry with paper towels. Rub both sides with olive oil, salt, and black pepper. Squeeze fresh lemon juice over the fillets and set aside for 10 minutes.

    Pan Roast the Halibut

    Heat a large skillet over medium-high heat. Add a tablespoon of olive oil. Once hot, place the halibut fillets in the skillet skin-side down. Cook for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes or until the fish is cooked through. Remove from heat.

Sesame Hummus Preparation

    Blend the Ingredients

    In a food processor, add chickpeas, tahini, minced garlic, lemon juice, and salt. Blend until smooth. Add water as needed to achieve desired consistency.

    Add Sesame Seeds

    Once the hummus is blended, stir in the sesame seeds and mix well. Transfer to a serving bowl.

Smashed Potatoes Preparation

    Boil the Potatoes

    In a pot, add baby potatoes and cover with water. Bring to a boil and cook for about 15 minutes or until fork-tender. Drain and return to the pot.

    Smash the Potatoes

    Add butter, salt, and black pepper to the drained potatoes. Use a potato masher to lightly smash the potatoes, leaving some chunks for texture. Stir in chopped chives.

Olive Tapenade Salad Preparation

    Prepare the Tapenade

    In a bowl, combine green olives, black olives, capers, minced garlic, olive oil, and lemon juice. Mix well until combined.

    Garnish with Parsley

    Stir in chopped parsley for added freshness and flavor. Set aside to allow the flavors to meld.
