Preparing the Mozzarella Sticks

Prepare the Cheese Sticks
Cut the mozzarella cheese into 1/2 inch thick sticks, about 3 inches long.

Bread the Cheese Sticks
Dredge each mozzarella stick in flour, then dip in the beaten eggs, and finally coat with the bread crumb mixture. Ensure each stick is evenly coated.

Chill the Sticks
Place the breaded mozzarella sticks on a baking sheet and freeze for at least 30 minutes to help them hold their shape while frying.
Cooking the Mozzarella Sticks

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use enough oil so that the sticks can float while frying.

Fry the Cheese Sticks
Carefully add the mozzarella sticks to the hot oil in batches, being careful not to overcrowd the pan. Fry for 2-3 minutes until golden brown and crispy.

Drain the Sticks
Remove the fried mozzarella sticks from the oil and place them on a plate lined with paper towels to drain excess oil.
Making the Marinara Sauce

Combine the Sauce Ingredients
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir well to combine.

Simmer the Sauce
Let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens slightly.

Finish the Sauce
Stir in fresh basil just before serving, adjusting salt and pepper to taste.
