Preparation

    Prepare the Salmon Marinade

    In a bowl, mix olive oil, lemon juice, minced garlic, salt, black pepper, and fresh dill. This will be your marinade for the salmon.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Prepare the Rice

    Rinse the white rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.

Grilling

    Prepare the Vegetables

    While the rice is cooking, slice the zucchini and bell peppers into strips. Trim the ends of the asparagus.

    Grill the Vegetables

    Heat a grill pan or outdoor grill over medium heat. Lightly coat the grill with olive oil. Add the zucchini, bell peppers, and asparagus. Grill for about 5-7 minutes, turning occasionally, until the vegetables are tender and have grill marks.

    Grill the Salmon

    Remove the salmon from the marinade and place it on the grill. Grill for 4-6 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Serving

    Plate the Dish

    On each plate, serve a portion of rice, followed by grilled salmon and a generous helping of grilled seasonal vegetables. Garnish with additional dill if desired.
