Preparation of Potatoes

Wash and Peel Potatoes
Thoroughly wash the russet potatoes under cold water. Use a vegetable peeler to remove the skin. If you prefer skin-on fries, you can skip this step.

Cut Potatoes into Strips
Cut the peeled (or unpeeled) potatoes into even strips about 1/4 to 1/2 inch thick. Try to keep the size uniform for even cooking.

Soak the Potatoes
Place the cut potato strips in a bowl of cold water and soak for at least 30 minutes to remove excess starch. This helps achieve a crispier texture.
Cooking the Fries

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (180°C). Use a thermometer to ensure the oil is at the right temperature.

Dry the Potatoes
After soaking, drain the potato strips and pat them dry with a clean kitchen towel. This prevents oil splatter and ensures they fry well.

Fry the Potatoes
Carefully add a handful of dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 4-6 minutes until golden brown and crispy.

Using a slotted spoon, remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle with salt, black pepper, and garlic powder to taste.
