Method

Duck Breast

  1. 1

    Prepare the Duck

Score the skin of the duck breasts in a crisscross pattern, taking care not to cut into the meat. Season both sides with salt and black pepper.

  2. 2

    Cook the Duck

Place the duck breasts skin-side down in a cold skillet. Turn the heat to medium and cook for about 6-8 minutes or until the skin is crispy and golden brown. Flip the breasts and cook for an additional 4-6 minutes for medium rare. Remove from the skillet and let rest.

Fig Jam

  1. 3

    Warm the Fig Jam

In a small saucepan, gently heat the fig jam over low heat until warmed through. Set aside.

Maple Bacon Brussels Sprouts

  1. 4

    Prepare Brussels Sprouts

Trim and halve the Brussels sprouts. Set aside.

  2. 5

    Cook Bacon

In a large skillet, cook the bacon over medium heat until crispy. Remove from skillet and chop into pieces. Leave the bacon fat in the skillet.

  3. 6

    Sauté Brussels Sprouts

In the same skillet with the bacon fat, add the Brussels sprouts. Drizzle with olive oil, maple syrup, salt, and pepper. Sauté for about 8-10 minutes until tender and caramelized.

  4. 7

    Combine with Bacon

Add the chopped bacon back into the skillet and mix well. Cook for an additional minute.

Beets

  1. 8

    Prepare the Beets

Wash and peel the red and golden beets. Cut them into wedges.

  2. 9

    Roast the Beets

Toss the beet wedges with olive oil, salt, and pepper. Spread on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes, or until tender.

Garnish

  1. 10

    Prepare the Garnish

In a small bowl, combine the pomegranate seeds and chopped pecans. Set aside.
