Duck Breast

Prepare the Duck
Score the skin of the duck breasts in a crisscross pattern, taking care not to cut into the meat. Season both sides with salt and black pepper.

Warm the Fig Jam
In a small saucepan, gently heat the fig jam over low heat until warmed through. Set aside.
Maple Bacon Brussels Sprouts

Prepare Brussels Sprouts
Trim and halve the Brussels sprouts. Set aside.

Cook Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove from skillet and chop into pieces. Leave the bacon fat in the skillet.

Combine with Bacon
Add the chopped bacon back into the skillet and mix well. Cook for an additional minute.
Beets

Prepare the Beets
Wash and peel the red and golden beets. Cut them into wedges.

Roast the Beets
Toss the beet wedges with olive oil, salt, and pepper. Spread on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes, or until tender.

In a small bowl, combine the pomegranate seeds and chopped pecans. Set aside.
