Calamari Preparation

    Prepare the Calamari

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

    Coat the Calamari

    Dip each calamari ring first into the beaten eggs, allowing excess to drip off, then coat it in the flour mixture. Shake off any excess flour.

    Bread the Calamari

    After coating with flour mixture, roll each calamari ring in the breadcrumbs until fully covered.

Frying

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari rings to the hot oil in batches, without overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain the Calamari

    Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Make the Sauce

    Add the crushed tomatoes, dried oregano, salt, and sugar to the saucepan. Stir to combine and let it simmer for about 15-20 minutes, stirring occasionally.

    Finish the Sauce

    Stir in the chopped fresh basil just before serving.

Serving

    Serve the Calamari

    Serve the crispy calamari hot, accompanied by the marinara sauce for dipping.
