Method
Hummus
Rinse and prep chickpeas
Drain and rinse the canned chickpeas under cold water for 30–60 seconds. If you prefer extra-smooth hummus, remove a few of the skins by pinching the chickpeas between fingers (optional).
Blend base
In a food processor, combine the drained chickpeas, tahini, lemon juice, minced garlic, ground cumin and salt. Pulse a few times to break down the chickpeas.
Emulsify
With the processor running, drizzle in the 2 tablespoons olive oil. Add cold water, 1 tablespoon at a time, and process between additions until the hummus is smooth and spreadable (about 1–2 minutes total). Scrape down the sides as needed.
Adjust seasoning
Taste and adjust salt, lemon, or cumin as desired. If hummus seems thick, add another tablespoon of cold water or a splash of olive oil and process briefly.
Plate and garnish
Spoon the hummus into a shallow serving bowl. Create a shallow well in the center with the back of a spoon, drizzle the remaining 1 tablespoon olive oil over the top, and sprinkle with smoked paprika.

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cut each pita round into 6 triangles (points). Separate layers if they are pocket-style and press together so they hold their shape.
In a small bowl, brush or toss the pita triangles with 1 tablespoon olive oil, then sprinkle with za'atar or oregano and the 1/4 teaspoon fine salt. Arrange in a single layer on the baking sheet.
Bake for 8–10 minutes, until golden and crisp at the edges. For extra crispness, flip once halfway through baking. Remove and cool slightly — they will continue to crisp as they cool.
