Prepare ginger
Peel and grate or finely mince enough fresh ginger to yield about 1/2 tablespoon. If you prefer less bite, muddle the ginger in the shaker with the lime instead of grating.
Build in shaker
In a cocktail shaker, add the prepared fresh ginger, 1/2 lime (juice only), pear nectar (2 oz), white grapefruit juice (1.5 oz), grapefruit vodka (2 oz), and simple syrup (1/4 oz).
Muddle gently
Using a muddler or the back of a spoon, gently press the ginger and lime in the shaker for about 8–10 seconds to release juices and ginger aroma. Do not pulverize — you want flavor, not large fibrous pieces.
Shake
Fill the shaker with ice (about 1 cup), secure the lid, and shake vigorously for 10–12 seconds until the shaker is cold to the touch.
Strain and top
Double-strain the cocktail into a chilled highball or Collins glass filled with fresh ice to remove ginger bits. Top with about 2 oz (a splash) of soda water and gently stir once to combine.
Garnish & Finish
Garnish the glass with a lime slice on the rim and, if desired, a thin slice of fresh ginger floated on top for aroma. Serve immediately.
