Thyme-Fig Syrup (house-made)

Combine water and sugar in a small saucepan over medium heat. Stir until sugar fully dissolves and the mixture reaches a gentle simmer.

Add quartered figs and thyme sprigs to the simmering syrup. Reduce heat to low and simmer gently for 6–8 minutes, crushing the figs lightly with a spoon to release color and flavor.

Remove from heat. If using, add lemon zest now for brightness. Let the syrup steep with the figs and thyme for 20–30 minutes to intensify flavor.

Strain the syrup through a fine mesh sieve, pressing on the solids to extract as much liquid as possible. Discard solids. Cool to room temperature, then chill. Syrup will keep refrigerated in a sealed container for up to 7 days.

Cocktail Preparation

Prepare glass

Chill a martini or coupe glass by filling with ice and cold water while you prepare the cocktail, or place it in the freezer for 5–10 minutes.

Slice one fresh fig in half. Reserve one half for muddling and a thin slice for garnish.

In a mixing glass or shaker, add the halved fresh fig (use flesh side down), then add the house-made thyme-fig syrup (0.75 oz). Muddle the fig and syrup together thoroughly until the fig is well broken down and releases juices and pulp (about 20–30 seconds).

Add Pisco (2 oz), Cointreau (0.75 oz), and freshly squeezed lime juice (0.75 oz) into the shaker with the muddled fig mixture.

Fill the shaker with ice (about 1 cup). Shake vigorously for 12–15 seconds until the outside of the shaker is very cold and slightly frosty. This chills and dilutes the drink appropriately while integrating fig solids.

Double-strain the cocktail into the chilled martini or coupe glass using both the main shaker strainer and a fine mesh sieve to remove fig seeds and thyme bits, yielding a smooth cocktail.

Garnish & Serve

Float a thin fresh fig slice on the surface of the cocktail and lightly slap a thyme sprig between your palms to release aromatics, then place it alongside or atop the fig slice.

Serve immediately. Suggested serving: 1 Fig Thyme Martini per glass.
