Waffle Batter
Preheat
Preheat your waffle iron following the manufacturer's instructions. If it has temperature settings, set it to medium-high (about 375–400°F / 190–205°C) for a crisp exterior and tender interior.
Dry ingredients
In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon fine salt until evenly combined.
Wet ingredients
In a separate bowl or large measuring cup, whisk 2 large eggs lightly, then add 1 1/2 cups whole milk, 6 tablespoons melted and slightly cooled unsalted butter, and 1 teaspoon vanilla extract. Whisk until homogeneous.
Combine batter
Make a well in the center of the dry ingredients and pour in the wet mixture. Gently stir with a spatula or wooden spoon until most of the flour is incorporated and no large dry pockets remain. Do not overmix; a few small lumps are fine. The batter should be pourable but slightly thick. If too thick, add up to 2 additional tablespoons milk; if too thin, add 1–2 tablespoons flour.
Rest (optional but recommended)
Let the batter rest for 5–10 minutes at room temperature. This hydrates the flour and improves texture, producing a tender interior while retaining crispness outside.
Cook & Serve
Prepare waffle iron
Lightly grease the preheated waffle iron with a small amount of melted butter or neutral oil if your iron is not nonstick. Wipe away excess so you don't cause smoke.
Cook waffles
Pour batter onto the center of the hot waffle iron, using about 1/2 to 3/4 cup per waffle for a standard Belgian waffle maker (adjust amount for your iron size). Close the lid and cook until steam slows and waffles are golden brown and crisp, about 3–6 minutes depending on your iron. Do not open frequently; trust the timing and steam cues.
Keep warm
If making multiple waffles, keep finished waffles warm and crisp by placing them on a wire rack set over a baking sheet in a 200°F (95°C) oven while you finish cooking the rest. This prevents sogginess from steam.
Serve
Serve waffles hot with desired toppings: a pat of unsalted butter, maple syrup, a dusting of powdered sugar, or fresh fruit. Enjoy immediately.
