Method

Prepare bread & base

Lightly brush both sides of the 2 bread slices with 1 tbs olive oil. Toast in a skillet over medium heat or under a broiler until golden and crisp but not burnt, about 2–3 minutes per side in a skillet or 1–2 minutes under broiler. Remove and set aside to cool slightly.

season hummus

In a small bowl, stir 1 cup hummus with the lemon zest, lemon juice, 1/4 tsp salt, 1/8 tsp black pepper, and half of the chopped parsley (1 tbs). Taste and adjust seasoning — hummus should be bright and slightly tangy to cut through the other elements.

Prepare vegetables & crunch

If you haven't already, thinly slice 1/2 cup cucumber, 1/4 cup red onion, and grate 1/4 cup carrot. If using raw onion that is very sharp, rinse slices briefly in cold water and drain to soften the bite. Toss the grated carrot with a pinch of salt to draw out moisture for 2–3 minutes, then squeeze lightly in a towel if very wet.

If using pita chips or flatbread, place on a cutting board and crush coarsely with the back of a spoon or a rolling pin to create crunchy shards (about 1/2 cup). This adds texture to the sandwich and should be kept ready to sprinkle.

Assemble sandwich

Spread half of the seasoned hummus (about 1/2 cup) evenly over one toasted bread slice, covering edges to the crust. Spread the remaining hummus on the other slice.

On the bottom slice (hummus side up), layer the cucumber slices in an even layer, then add the drained onion, grated carrot, and any optional baby spinach or arugula if using. Scatter 2 tbs crumbled feta or roasted red pepper slices now if using those options.

Distribute the quick-pickled jalapeño or banana pepper slices (about 3 tbs) and the 2 sliced cornichon pickles evenly over the vegetables. Sprinkle the crushed pita chip shards (about 1/2 cup) across the sandwich for crunch.

Finish with the remaining chopped parsley (1 tbs) and a light dusting of sumac or smoked paprika (1/2 tsp) over the top hummus. Press the top bread slice (hummus side down) gently to compact the sandwich slightly so the layers hold.

Serve & finish

Cut the sandwich in half on a diagonal for easier eating. Optionally, secure each half with a toothpick. Serve immediately so the crunch remains crisp. If making ahead, keep crisp elements (crushed pita, pickles) separate and add just before serving.

Leftovers: wrap tightly and refrigerate up to 24 hours; fresh crunch will soften with time, so re-crunch pita or add fresh vegetables when serving again.
