Prepare greens

Wash the mixed salad greens and baby spinach thoroughly in cold water. Spin or pat dry until mostly moisture-free. Tear larger leaves into bite-sized pieces and place in a large serving bowl.

Add cabbage

Add the shredded red cabbage to the bowl with the greens and toss gently to combine.

Vegetables & Add-ins

Prep vegetables

Halve the cherry tomatoes, thinly slice the cucumber and green bell pepper, julienne or shred the carrot, and very thinly slice the red onion. Add all prepared vegetables to the bowl with the greens and cabbage.

Add cheese and seeds (optional)

If using, sprinkle the crumbled feta or shaved Parmesan and the toasted sunflower seeds / chopped toasted nuts over the salad.

Add herbs and season

Chop the fresh parsley (and optional basil or dill). Scatter herbs over the salad. Sprinkle the kosher salt and freshly ground black pepper evenly across the salad; wait to do any additional seasoning until after tossing and tasting.

Dressing (Classic Vinaigrette)

Make vinaigrette

In a jar or small bowl, combine the red wine vinegar, Dijon mustard, honey (or maple), minced garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Whisk or shake to blend. Slowly stream in the extra-virgin olive oil while whisking (or pour the oil into the jar and shake vigorously) until the dressing emulsifies and is slightly thickened. Taste and adjust seasoning if needed.

Dress the salad

Just before serving, pour about half of the vinaigrette over the salad and toss gently but thoroughly with salad tongs to coat all ingredients. Taste one bite; add more dressing as desired (reserve any leftover dressing for guests). If needed, adjust salt and pepper after tossing.

Serve

Transfer tossed salad to a clean serving platter or leave in the bowl for buffet service. Garnish with a few whole cherry tomatoes, a light drizzle of olive oil, and a sprinkle of extra herbs or cheese if desired. Serve immediately.
