Preheat and prepare fish

Preheat oven to 400°F (200°C). Pat the tilapia fillets dry with paper towels and place them in a single layer on a large rimmed baking sheet lined with parchment or in a lightly oiled 9x13 baking dish. Season both sides of each fillet evenly with 1 tsp salt and 1 tsp black pepper.

Make crumb mixture

In a medium mixing bowl combine 2 cups breadcrumbs, 1 cup grated Parmesan, 2 tbsp olive oil, 6 tbsp melted butter, 2 tbsp chopped parsley, 1 tbsp lemon zest, 2 minced garlic cloves, and 1 tsp Dijon mustard. Stir thoroughly until mixture is evenly moistened and holds together lightly when pressed. Taste a small pinch and adjust seasoning if desired.

Top the fillets

Divide the crumb mixture evenly among the 8 fillets (about 1/8 of the mixture per fillet). Gently press the crumb topping onto the top of each fillet so it adheres in a uniform layer. If using, lightly spray or brush the tops with the optional 1 tsp olive oil to promote browning.

Bake

Bake in the preheated oven for 10–14 minutes, depending on fillet thickness: thinner fillets will take about 10 minutes, thicker ones up to 14. The fish is done when the internal temperature reaches 145°F (63°C) and the flesh flakes easily with a fork. The topping should be golden-brown and crisp.

Optional broil for extra color

If the topping needs more color, switch the oven to broil on high for 1–2 minutes, watching carefully to avoid burning. Remove immediately once golden and fragrant.

Serve & Garnish

Transfer fillets to a warm serving platter or keep in the baking dish for catering service. Garnish each fillet with a sprinkle of chopped fresh dill or extra parsley and serve with lemon wedges on the side for squeezing over the fish.

For catering: keep fillets covered loosely with foil to retain warmth and crisp the toppings briefly under a hot oven or broiler (1–2 minutes) just before service if necessary. Provide tongs or spatulas for easy plating.
