Fruit filling
Prepare peaches
Peel (optional) and slice enough peaches to make about 6 cups of slices. Place slices in a large bowl.
Add sugars, lemon juice, cornstarch, cinnamon, and salt to the bowl with peaches. Toss gently until peach slices are evenly coated and the cornstarch is dissolved. Let the mixture sit 10 minutes so juices begin to release.
Transfer the peach mixture and any accumulated juices to the prepared baking dish, spreading into an even layer.
Biscuit topping
In a large mixing bowl, whisk together the flour, 1 tablespoon granulated sugar, baking powder, and 1/2 teaspoon salt.
Add the cold cubed butter to the dry ingredients. Using a pastry cutter, two knives, or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
In a small bowl, whisk together the milk, egg, and vanilla until combined.
Pour the wet ingredients into the flour-butter mixture. Stir gently with a wooden spoon or rubber spatula until just combined — the dough will be slightly sticky and shaggy. Do not overmix.
Using a spoon or a 1/4-cup scoop, drop generous spoonfuls of the biscuit dough evenly over the peach filling. Leave small gaps so steam can escape and the filling can bubble up between biscuits.
Baking and finishing
Place the baking dish on a rimmed baking sheet (to catch any bubbling juices) and bake in the preheated oven for 35–45 minutes, until the topping is golden brown and a toothpick inserted into a biscuit comes out clean and the filling is bubbly.
If the topping is browning too quickly before the filling is bubbling, tent loosely with foil and continue baking until done.
Remove the cobbler from the oven and let it rest 10–15 minutes. This helps the filling set slightly and makes it easier to serve.
Serve warm, spooning peach cobbler into bowls and topping with vanilla ice cream or whipped cream as desired.
