    Peel and finely dice 1/2 medium yellow onion (about 1/4–1/3 cup). Core, seed, and finely dice 1/2 green bell pepper (about 1/4–1/3 cup). Dice 3 oz cooked ham into roughly 1/4-inch pieces.

    Measure and warm

    Measure 2 tablespoons milk and 1/2 cup shredded cheddar. Lay out 2 slices of sandwich bread. If you prefer warm bread, soften 1 teaspoon butter to room temperature for spreading or preheat a skillet for toasting.

Make the Western-style scramble

    Beat eggs

    Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Whisk until combined and slightly frothy, about 20–30 seconds.

    Sauté vegetables and ham

    Place a nonstick skillet over medium heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown. Add the diced onion and bell pepper and sauté until they soften and the onion becomes translucent, about 3–4 minutes. Add the diced ham and cook for another 1–2 minutes to warm and brown slightly.

    Cook eggs with fillings

    Reduce heat to medium-low. Pour the beaten eggs over the softened vegetables and ham in the skillet. Allow eggs to set slightly at the edges for 10–15 seconds, then gently stir with a spatula, pushing cooked egg toward the center. Continue gently folding until eggs are mostly set but still moist, about 1–2 minutes total. Remove from heat when eggs are slightly underdone—they will continue to cook from residual heat.

    Add cheese

    Sprinkle 1/2 cup shredded cheddar cheese evenly over the eggs in the skillet. Fold once or twice to incorporate the cheese and let it melt into the scramble, about 30 seconds. Taste and adjust seasoning with a small pinch of salt or pepper if needed.

Assemble and finish sandwich

    Prepare bread

    If you like toasted bread, heat a clean skillet over medium-low and add 1 teaspoon unsalted butter, then toast the bread slices butter-side down until golden, about 1–2 minutes. Alternatively, use untoasted bread or spread 1 tablespoon mayonnaise on one or both slices.

    Place one slice of bread on a plate. Spoon the hot egg, ham, onion, pepper and cheese mixture evenly onto the bread. Top with the second slice. If desired, add 1 teaspoon hot sauce or ketchup inside the sandwich before closing.
